Can an offer letter route through a manager before the candidate sees it?

Yes, with sequential signing on the Business plan: the hiring manager signs first and the candidate's link only activates once they have. Reminders chase whoever currently holds the pen, and the completed PDF carries one audit trail across the whole chain.

How do I track who has acknowledged a new policy?

Send the acknowledgment as an envelope to a named recipient list and the tracking view shows exactly who's signed, who's viewed, and who's ignoring it, with per-recipient reminder emails replacing the spreadsheet you'd otherwise maintain by hand.

Will a signed acknowledgment hold up if it's disputed two years later?
